Here are recipes for quick and easy ham chowder with Parmesan croutons. This makes a nice lunch or even a quick supper when you have one of those busy evenings. It is a good idea to make the croutons a day ahead of time.
2 (18.5 ounce) cans potato with broccoli and cheese soup
6 ounces cooked ham, cubed
1 cup of frozen corn
Pour both cans of soup into a saucepan and place over medium heat. Stir in the ham and corn and bring to a boil. Turn heat to low and cook for 10 minutes, stirring occasionally. Makes 4 servings.
1 loaf of day-old French bread
1 cup cooking oil
1 teaspoon garlic salt
2 tablespoons grated Parmesan cheese
Preheat oven to 350 degrees. Cut the French bread up into cubes. Spread out on baking sheet and drizzle oil over, coating evenly.
Bake in preheated oven for 5 to 8 minutes or until golden brown. Dump immediately into a large paper bag and sprinkle in the garlic salt and Parmesan cheese.
Shake the bag vigorously until croutons are coated well. Remove and put on a rack to cool. Store in a tightly sealed container in a cool, dry place. Sprinkle in soups and salads.
