Peanut Butter and Banana Sandwiches
3 1/2 ounce jar of peanut butter
Spread lightly-buttered slices of bread thickly with peanut butter. Over this place a layer of thinly-sliced bananas. Cover with another slice of buttered bread. This quantity makes five large sandwiches. Especially good served with hot chocolate!
1/2 cup minced cooked chicken
1/2 cup chopped celery hearts
1 hard-cooked egg
6 pimiento-stuffed olives
Hot, buttered baking-powder biscuits
1/4 cup mayonnaise
Mix together the chicken, chopped celery, hard-cooked egg and olives both chopped. Moisten with the mayonnaise. Have ready hot, butterd baking powder biscuits made a little thinner than usual.
Spread the mixture between the biscuits. The recipe makes enough to fill about twenty biscuits. This filling is equally delicious spread between cold, buttered biscuits or slices of buttered bread.
Combination Banana Sandwich
3 ripe bananas
Yolks of 3 hard-cooked eggs
1/4 teaspoon salt
3 tablespoons minced bacon, previously cooked crisp
Cayenne pepper (if desired)
Mash together the bananas and the yolks of the hard-cooked eggs. Fry until crisp several slices of bacon, crumble or mince fine, measure, and add to banana mixture. Season with salt and a dash of cayenne pepper if desired. Spread between slices of buttered bread. This recipe makes sufficient filling for sandwiches made from a large-sized loaf of bread.
