Nothing says summer better than cucumbers. These sweet yet slightly tart gems are crunchy and bathed in a creamy sauce. For a little color just add a few chopped pimentos.
1/2 C of sour cream
3 tbsp white vinegar or pickle juice
1 tbsp sugar
1/4 tsp pepper
4 cucumbers, sliced thin
1 sweet onion, sliced thin and separated into rings
Whisk the sour cream and vinegar together in a mixing bowl. Add the sugar and
pepper and whisk until the sugar has dissolved. Place the cucumber and onions
into a serving bowl. Fold the sauce into the cucumbers until blended together well.
Cover the bowl and chill for at least 4 hours. Stir again before serving.
